Cassia is commonly referred to as Dalchini in India. In India, Cassia is a more economically priced alternative to Ceylon Cinnamon (by a factor of 3) and is characterized by a much spicier note when compared with Ceylon Cinnamon. It is known to be an Indian kitchen staple and is very popular in Indian cooking.
